【4th ed.】HADO SHIOSAI Walnut Handle

Concept: The Spirit of Craftsmanship

The name “HADO” is derived from characters meaning “the way of the blade.” Much like the disciplines of tea ceremony, flower arrangement, judo, and martial arts, the Japanese concept of “do” signifies a path toward perfection—not just in technique and tools but in the atmosphere and experience as a whole. HADO embodies this distinctly Japanese philosophy, offering knives that go beyond mere sharpness. We craft each knife with passion, designed to bring the joy of ownership to all.
The blade’s striking contrast, reminiscent of a Japanese sword, is intentionally left with a rugged, hammered texture rather than being polished smooth, lending it a bold character. Meanwhile, the edges along the spine and heel—the parts of the blade closest to the handle—are carefully rounded for a comfortable grip. The warm walnut handle has a refined design that develops a rich patina over time, fostering a deeper connection as you use it.
This collection includes three models: a 135mm Ko-Bunka, a 180mm Bunka, and a 210mm Kirituke Gyuto. The Ko-Bunka’s compact yet well-balanced size makes it perfect for those living alone or for quick meal prep. The Bunka is ideal for home cooks and families, while the Kirituke Gyuto is highly recommended for professional chefs.
The packaging features artwork by Philippe Weisbecker, a Paris-based artist with a global following. His drawings convey a distinctive vision that sets HADO apart from the traditional, austere image of Japanese knives.

【4th ed.】sen-閃 Paring knife 150mm

A Beloved Masterpiece Favored by Michelin-Starred Chefs

Sen-閃 is a French brand founded on the concept of “spreading Japan’s traditions and culture around the world.” Developed in collaboration with a French art director and product designer, the brand draws on local insights.
The blades are crafted from Saki cutlery stainless steel, specifically Gin-3 steel, which rivals the sharpness of high-carbon steel. This rare material is primarily available in Sakai due to the challenges involved in its heat treatment. Since both the blacksmith and the blade sharpener can produce only about ten pieces per day, the price is relatively high. However, these knives remain effective even when they become quite short, making them both cost-effective and environmentally friendly.
In addition to their hardness, the techniques employed in heat treatment and sharpening strike a balance between ease of sharpening and cutting performance. By carefully managing the temperature during heat treatment, these knives achieve exceptional sharpness along with a soft texture that makes sharpening effortless.
The handles are made from sustainably farmed indigo, featuring indigo dyeing techniques applied to Hokkaido maple. The subtle indigo and black pattern create a refined design that is sophisticated yet not overpowering, allowing it to complement any kitchen beautifully. The color of the indigo dye varies each year based on the harvest, resulting in a delightful range of hues. We invite you to discover your favorite piece!

【3rd ed.】Ginsan 180 Chef’s Knife Line

Combining Functionality and Design: The Ginsan Stainless-Steel Knife

Like traditional steel knives, Ginsan stainless-steel knives are known for their sharp cutting edge and rust-resistance. A common drawback of stainless-steel knives is their difficulty in sharpening them, but Ginsan knives can be easily grinded on the whetstone. This allows extended use with regular sharpening.
Moreover, the forging process for strengthening the entire blade results in long-lasting sharpness and resistance to chipping.
Yamatsuka Hamono Seisakujo has been selling these Ginsan knives for professional use. However, this time, they emphasized on cost performance to make this exquisite sharpness accessible to everyday households. Adding the use of machinery to the traditional handcrafting process made it possible to offer the product at an affordable price.
All three products have equal sharpness, but each design shines with individuality.
The ‘Ginsan 180 Chef’s Knife’ is a gem if you want to simply enjoy the beautiful craftsmanship of the blade.
An elegant wave pattern added to this knife is the ‘Ginsan Nickel Damascus 180 Chef’s Knife’ which is luxurious in style and perfect as a gift.
Finally, the ‘Ginsan 180 Chef’s Knife with Hand Engravings’ has delicate geometric patterns all done by hand. It will surely make a gorgeous addition to your kitchen.

【2nd ed.】INOX Wa-Santoku Knife with Thinned Wood and Octagonal Handle

Wa-Santoku Knives: Experience the sharpness used by professional chefs who value flavor and umami, right at home.

The ‘INOX Wa-Santoku Knife with Thinned Wood and Octagonal Handle’ was created by a Sakai knife forging manufacturer with the hope of making traditional knives, cherished by professional chefs, more accessible to a wider audience.

While traditional Japanese knives are often made of steel and are single bladed, the Wa-Santoku uses stainless steel, making it rust-resistant and easier to maintain than steel knives.
Steel is generally considered easier to sharpen, but the craftsmen’s expert heat treatment and sharpening techniques have resulted in a knife that is both easy to sharpen and exceptionally sharp.
The handle is made from ‘kanbatsu-zai’, wood produced through the thinning process, promoting sustainability. Crafted from thinned wood of Japanese pagoda and black walnut trees, it has a warm, natural texture. Takahashikusu is committed to environmental management, and they also used thinned wood for the packaging boxes.

‘Santoku’ refers to three purposes: meat, fish, and vegetables. This versatile knife combines the best features of a professional tool, making it an essential item in your kitchen.

A Small but Convenient Japanese Petty Knife

Sakai Kitchen’s original Santoku knife, ‘Baikoku’ is a true gem, known for its beauty and exquisite sharpness, crafted through careful hammering and sharpening.
Among the Sakai knives with a history of over 600 years, the most famous is known as ‘Sakai Uchi Hamono’ (Sakai forged knife) and they have been cherished by chefs since back then. These properties maintain the exceptional sharpness characteristic of Sakai forged knives for long periods of time.
The Japanese Petty Knife is perfect for peeling fruit, rounding the corners of cut vegetables, and for decorative cutting. It is also great for everyday use, making it ideal for bento preparation or cooking in small spaces.
Durable and water-resistant oak is used for the handle, and expert craftsmen apply a layer of lacquer for added strength and long-lasting durability.
