Among the Sakai knives with a history of over 600 years, the most famous is known as ‘Sakai Uchi Hamono’ (Sakai forged knife) and they have been cherished by chefs since back then. They are crafted by heating White Steel No. 2 containing minimal impurities, and then repeatedly hammered to refine the particles inside for hardness and toughness. These properties maintain the exceptional sharpness characteristic of Sakai forged knives for long periods of time.
The Japanese Petty Knife is perfect for peeling fruit, rounding the corners of cut vegetables, and for decorative cutting. It is also great for everyday use, making it ideal for bento preparation or cooking in small spaces.
Durable and water-resistant oak is used for the handle, and expert craftsmen apply a layer of lacquer for added strength and long-lasting durability.
Steel knives are easier to sharpen compared to other materials. With continued use and care, you will grow a special attachment to them.
