Steel is generally considered easier to sharpen, but the craftsmen’s expert heat treatment and sharpening techniques have resulted in a knife that is both easy to sharpen and exceptionally sharp.
The handle is made from ‘kanbatsu-zai’, wood produced through the thinning process, promoting sustainability. Crafted from thinned wood of Japanese pagoda and black walnut trees, it has a warm, natural texture. Takahashikusu is committed to environmental management, and they also used thinned wood for the packaging boxes.
